Cheddar-Kale Chips

Ingredients

  • 1 C red bell pepper, seeded and chopped
  • 1 C cashews
  • 2 T nutritional yeast
  • 2-4 T water, as needed
  • 2 T agave syrup
  • 1 T olive oil
  • 1/2 teaspoon salt
  • 6 C bite-size pieces of kale, tightly packed (about 1 bunch)

Directions

  1. Place the red bell peppers in a blender, then the remaining ingredients, except for the kale. Blend, using only enough water to process into a thick cream.

  2. In large mixing bowl, toss the pepper mixture with the kale, coating it evenly.

  3. Spread the kale onto two 14-inch-square dehydrator trays, and dry at 104o for 8-10 hours.
