Ingredients
- 8 eggs beaten
- 1 1/4 cup skim milk
- 1/2 cup diced onions
- 1 lb low fat sausage or turkey bacon
- 1 1/2 cup veggie of choice (can be mixed: broccoli, cauliflower, spinach, mushrooms, green peppers)
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 cloves garlic minced
- 1 cup favorite shredded cheese
Directions

Preheat oven to 350

In a large skillet set at med/high, brown sausage, onions, garlic til sausage cooked.

Pour meat mix into 12 sprayed muffin tins.

In large bowl, beat eggs, add milk, cheese and the seasonings.

Pour egg mix over meat mixture til cup is full.

Bake for 20 or 25 mins til set. Let stand for 5 minutes.
