GREEN EGGS and HAM

Popeye would approve of my version of Dr. Seuss’s favorite dish, which includes spinach and green onions. To avoid cancer-causing nitrites, choose uncured ham. It is sold at natural foods markets and many supermarkets. If you do not eat pork, use turkey bacon instead. A one-dish meal, these colorful eggs make a hearty breakfast accompanied by whole-grain toast.
Fast Fact: Spinach is rich in beta-carotene as well as folate.
Quick Tip: For chopped spinach in seconds, grab a handful of raw leaves or cooked spinach and snip it into strips using kitchen shears.

Serves 2 peopleIngredients
- 2 large eggs
- 2 large egg whites
- 1/2 teaspoon salt
- Ground black pepper
- 1 cup chopped fresh spinach, or defrosted frozen chopped spinach, squeezed dry
- 3 whole green onions, chopped
- 1/2 cup chopped, uncured ham
- Cooking spray

Whisk the eggs and whites, salt, and 2 or 3 grinds of pepper in a bowl until well combined.

Coat a medium skillet very liberally with cooking spray and heat it over medium-high heat. Add the spinach, pulling the frozen spinach apart, if using. Mix in the scallions, and ham. Cook until the greens are wilted, 2 minutes, stirring with a wooden spoon. Pour in the eggs. Stir constantly until they are combined with the other ingredients and scrambled, about 2 minutes. Divide the cooked eggs between two plates and serve immediately.
