Crispy Pork Medallions

Serves 4 people
Ingredients
- 2 tbsp Dijon mustard
- 1 pork tenderloin cut into 8 medallions
- 1/2 cup panko (Japanese breadcrumbs)
- 1 tbsp minced parsley and basil
- salt and pepper to taste
- EVOO
Directions

Preheat oven to 450 degrees.

Rub mustard over pork medallions.

Combine panko and other spices.

Dredge pork in panko mixture.

Saute pork for 2 minutes until golden brown.

Place in oven and bake.
