Crispy Pork Medallions

Cook time: 25 minutes
Serves 4 people

Ingredients

  • 2 tbsp Dijon mustard
  • 1 pork tenderloin cut into 8 medallions
  • 1/2 cup panko (Japanese breadcrumbs)
  • 1 tbsp minced parsley and basil
  • salt and pepper to taste
  • EVOO

Directions

  1. Preheat oven to 450 degrees.

  2. Rub mustard over pork medallions.

  3. Combine panko and other spices.

  4. Dredge pork in panko mixture.

  5. Saute pork for 2 minutes until golden brown.

  6. Place in oven and bake.
