Cheesy Broccoli & Cauliflower Casserole

Ingredients

  • 1 large head broccoli, chopped into bite size pieces
  • 1 large head cauliflower, chopped into bite size pieces
  • 17 Ritz crackers, crushed
  • 5 T butter
  • 1/4 lb. Velveeta cheese, melted

Directions

  1. Cook broccoli and cauliflower slightly by steaming or parboiling, drain.

  2. Mix 3 T butter and 1/4 lb. melted Velveeta cheese.

  3. Spray 13×9 dish with cooking spray. (Use eggplant colored rectangular dish and coat with oil)

  4. Mix broccoli and cauliflower with cheese mixture, place in dish.

  5. For topping, mix crackers with 2T melted butter, spread on vegetables.

  6. Tent loosely with foil, bake 30 minutes.

  7. Remove foil toward the end of baking time.
