Ingredients
- 2 sweetcorn cobs, kernels sliced off
- 4 cartons black beans in water, drained and rinsed (or 6-7 cups sprouted black beans, Aduki or mixed sprouts or your choice)
- 1 green pepper, chopped
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- 1-2 green chillies, chopped
- 1 red onion, chopped
- Small bunch coriander, chopped
- Dress with:
- Juice of 2 limes
- 1 teaspoon sea salt
- Few grinds black pepper, to taste
- Tabasco sauce (optional)
Directions

Chop all main ingredients and add to a large salad bowl.

Squeeze over the limes and add the sea salt and pepper, and stir in.

I suggest adding Tabasco sauce to each individual serving (to taste).

This is perfect in a lunch box!! Will keep in fridge for 2-3 days.
