Ingredients
- 3/4 cups brown rice (uncooked)
- 1-2 avocado, chopped into chunks
- 15 oz. red kidney beans, drained and rinsed
- 1 green pepper, chopped
- 3-4 tomatoes, chopped into chunks
- 1-2 red chilli or jalapeno, chopped
- 2-3 T red onion (finely chopped)
- cilantro
- DRESSING:
- Juice of 1 lime
- 1-3 garlic cloves, crushed (to your taste!)
- 2-3 tablespoons olive oil
Directions

Cook rice as per packet instructions.

Whilst rice cooks, mix all other ingredients in your bowl and mix in the dressing

Drain the rice and serve mixing bowl ingredients over top.
