Apple Dumpling Cake

Ingredients

  • 3 pounds apples - peeled, cored and sliced - Macintosh are good - not granny smith
  • 2 cups all-purpose flour
  • 1 1/2 cups white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs, beaten
  • 1/2 cup vegetable oil
  • 1/2 cup applesauce
  • 1 teaspoon ground cinnamon

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×13 inch baking dish.

  2. Place sliced apples in baking dish. In a medium bowl, mix together the flour, sugar, baking powder, and salt. Stir in eggs, applesauce, and oil; pack on top of apples. Sprinkle with cinnamon.

  3. Bake in preheated oven for 40 to 45 minutes, or until topping is puffed and golden brown.
