Ingredients

- 1 cup all-purpose flour
- 1 cup whole wheat pastry flour
- 2 cups old-fashioned rolled oats
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 3/4 cup Pompeian Extra Light Tasting Olive Oil
- 2 tsp. vanilla extract
- 2 Tbsp. water
- Fruit Filling:
- 1-1/2 cups apple, peeled and diced
- 1/2 cup walnuts, chopped
- 1 cup dates, chopped
- 1 cup low-fat caramel ice cream topping
- 3 Tbsp. all-purpose flour

Preheat oven to 350o F and spray a 9 × 13-inch glass baking dish with cooking spray.

In a large bowl, combine flours, oats, granulated sugar, brown sugar, baking soda, cinnamon, and salt. Make a well in the center. Add the olive oil, vanilla extract, and water. Blend well.

Reserve 1-1/3 cups of crumb mixture in a small bowl. Press the remaining mixture onto the bottom of the prepared pan. Bake crust for 15-17 minutes or until slightly puffed.

While the crust is baking, combine the apples, walnuts, dates, caramel topping, and 3 tablespoons of flour. Stir until well mixed.

Distribute fruit mixture over the prepared crust. Sprinkle reserved crumb topping over fruit mixture and bake for another 25-30 minutes or until lightly browned.

Cool in the pan on a wire rack before cutting. Store in an airtight container.
