Ingredients
- whole wheat baguette
- salt and pepper
- 14oz can quartered artichoke hearts, in water, drained and roughly chopped
- 3oz spinach thawed and squeezed dry
- 3/4 cup Rocco's Magnificent Mayo (recipe) or store bought low fat mayo
- 3/4cup grated Parmigiano-Reggiano cheese
- 2 large cloves of garlic, minced
- pinch of red pepper

Preheat 450, Line a baking sheet with parchment papper

lay baguette of sheet, salt and pepper, bake until golden brown, flip, approx 6 minutes

Meanwhile, in medium bowl, combine artichoke hearts, spinach, mayo, cheese, garlic and pepper, salt and pepper to taste

Spread the dip in a 8 X 8 pan Bake for 10 minutes

Turn broiler to high and boil the dip, until golden and bubbly, about 2 minutes
