Corn Chowder

Serves 6 people

Ingredients

  • 1 tbsp butter
  • 3 cups diced onions
  • 3/4 cup crumbs
  • 1/4 cup flour
  • 2 cups water
  • 1 cup clam juice
  • 2 cups chicken broth
  • 3 cups diced potatoes
  • 2 cups half and half
  • 2 cups corn kernels
  • 1 red pepper

Directions

  1. Mix liquids and butter.

  2. Add potatoes and onions.

  3. Cook until done

  4. Mix cracker crumbs, flour and seasonings.

  5. Add potato and onion mixture.

  6. Add pepper and mix well

  7. Bring to a boil.

  8. Add cream and corn.

  9. Simmer 15-20 minutes.
