Italian Beef Stew

Serves 8 people
Ingredients
- Olive oil
- 1 1/2 cups chopped onion
- 1/2 cup chopped carrots
- 2 lbs stew meat
- 3/4 tsp salt
- 1/2 tsp pepper
- can diced tomatoes
- 1 1/2 cups beef broth
- 1/2 cup water
- 2 tsp fresh oregano
- 1 pkg mushrooms
- 2 tbsp fresh basil
- 1 tbsp chopped parsley
Directions

Heat dutch oven over medium heat.

Add oil and saute chopped onion and carrot for 8 minutes.

Add garlic and saute for 45 seconds.

Dredge meat in flour and brown on all sides.

Return meat and onion to pan.

Add tomato and spices; bring to boil.

Cover, reduce heat and simmer 45 minutes.

Simmer uncovered for one hour.
