Ingredients
- Chicken stock - 8 cups
- 1 carrot, julienned
- 1 stalk of celery, cut on the bias
- mushrooms, shitake and cremini, sliced
- Handful of spinach, chiffonade
- Handful of snow peas, cut on a slant
- can of water chesnuts, diced
- 1/2 container of extra firm tofu, cubed
Directions

ok the carrot, celery, and mushrooms for 15 minutes or so. Add the rest of the ingredients and cook for another 10.
