chocolate mocha pot de creme

Ingredients
- 4 oz bittersweet chocolate, cut into very small pieces (as small as corn kernels)
- 1/2 teaspoon instant coffee
- very tiny pinch of salt
- 1 cup heavy cream
- 3 tablespoons plus 1 teaspoon sugar
- 1/2 teaspoon vanilla extract
Directions

Place chocolate in a heat-proof bowl. Add instant coffee and a small pinch of salt.

Place cream, sugar, and vanilla in a saucepan and heat over medium heat, stirring constantly.

As soon as it starts to simmer, take off heat and pour over chocolate. Let sit 1 minute. Whisk gently until creamy.

Pour into 4 ramekins.

Chill 5 hours.
