Ingredients
- 1 lb Goya red lentils
- 2 Tbs vegetable oil
- 1 medium onion, chopped
- 2 cloves of garlic, chopped
- 1 Tbs grated fresh ginger
- 1/2 tsp ground cumin
- 4 cups water
- 1 chicken boullion cube
- 2 Tbs fresh chopped cilantro
Directions

Sort and wash lentils; set aside. Heat oil in a large saucepan. Add onion and garlic. Cook until tender. Stir in ginger, curry powder and cumin. Cook and stir 1 minute. Add remaining ingredients and lentils. Bring to a boil. Reduce heat, cover and simmer 20 minutes or until lentils are tender. Add more hot water if necessary. Serve over cooked white rice.
