BEATEN RICE UPPEETU

Ingredients
- 1 cup beaten rice ( medium variety )
- 1/4 cup water .
- 1 cup chopped vegetables ( carrot , onion , potato , tomato , beans , etc . )
- 2 tbs cooking oil
- 1/2 cup coconut , grated
- 1/4 lime- size jaggery
- 1 lime-size tamarind
- 1/4 tsp turmeric powder
- 1 tsp mustard
- 2 green chillies , chopped
- 1 red chilli , broken
- 1/2 tsp urd dal
- 1/2 tsp bengal gram dal
- 1 sprig curry leaf
- 1 tsp cashewnut , broken or groundnut
- 1 tbs salt
- 1 tsp ghee .
Directions

. Clean the beaten rice with water, drain the water and keep it aside .

Grind tamarind , jaggery , grated coconut , red chilli , curry leaf , turmeric powder , a little salt and a

small quantity of water in a Mixie and make a pulp . Keep it separate .

Cook the vegetables with 1/4 tsp of salt and keep the cooked vegetables in a plate .

Fry cashewnut / ground nut in ghee . Keep it separately .

Keep a heavy bottomed vessel , kadai , on the flame . Put oil , mustard , urd dal , bengal gram dal . When the musterd splutters , add grounded pulp , and 1/4 cup water . When the water boils , add the soaked beaten rice and cooked vegetables and green chillies . Keep the flame low . Close the vessel with a lid . After 5 mts take out the lid and wait till the excess water evaporates . Saute gently . Garnish with the fried nuts . Take it out of the flame .
