Wild Mushroom Ragout

Ingredients

  • 1 oz dried porcini or shitake mushrooms
  • 1 1/2 pounds mixed wild mushrooms, cleaned and cut into bite sized pieces
  • Salt to taste
  • 2 tbls olive oil
  • 4 tbsp butter
  • 1 tbsp finely chopped parsley

Directions

  1. Bring qt of water to boil in md sized pot, add mushrooms

  2. Reduce heat and simmer for 30 min

  3. Drain liquid, reserve liquid

  4. For more intense flavor, repeat process with the same mushrooms

  5. Should yield 2-3 cups of tea

  6. Save mushrooms for pasta

  7. In saute pan, heat oil and add wild mushrooms at md heat

  8. Sprinkle lightly with salt and cook until lightly browned

  9. Add 2 cups of mushroom tea and cook until liquid is reduced by hald.

  10. . Reduce heat to md, add butter & parsley

  11. . Swirl pan to emulsify
