Ingredients
- 1 sm watermelon 6 lbs cut into 1 inch rounds
- 1/2 cup small mint leaves, torn
- 2 oz feta cheese, crumbled in large chunks
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1/4 tsp salt
- 1/4 tsp pepper
Directions

Heat grill or grill pan over high heat until very hot

Two at a time, grill rounds, turn once until charred (about 2-3 min per side)

Transfer watermelon to a cutting board and remove rind

Cut rounds into wedges

Arrange watermelon on platter

Sprinkle with mint and feta

Drizzle with olive oil & vinegar, then sprinkle with salt and pepper
