Grilled Watermelon, Mint & Feta Salad

Ingredients

  • 1 sm watermelon 6 lbs cut into 1 inch rounds
  • 1/2 cup small mint leaves, torn
  • 2 oz feta cheese, crumbled in large chunks
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1/4 tsp salt
  • 1/4 tsp pepper

Directions

  1. Heat grill or grill pan over high heat until very hot

  2. Two at a time, grill rounds, turn once until charred (about 2-3 min per side)

  3. Transfer watermelon to a cutting board and remove rind

  4. Cut rounds into wedges

  5. Arrange watermelon on platter

  6. Sprinkle with mint and feta

  7. Drizzle with olive oil & vinegar, then sprinkle with salt and pepper
