Ingredients
- 2/3 cups bulgur
- 1 2/3 c water
- 1/2 cup fresh lemon juice
- 12 oz pre-cooked shrimp
- pinch ground cumin
- pinch dried mint
- 3/8 tsp black pepper
- 1 cup diced cucumber
- 1 pint grape tomatoes
- 1/2 cup chopped red onion
- 1/2 cup chopped parsley
- 2 tbsp olive oil
- 1/2 cup crumbled feta
- 1/ tsp salt
Directions

In saucepan, combine bulgur, water and 2 tbsp lemon juice to a boil.

Cover and simmer until tender, about 15 min. Drain and let cool.

Put shrimp in serving bowl. Sprinkle with 2 tbls lemon & 1/8 tsp pepper. Let stand for 5 min

Stir in cucumber, tomatoes, onion, parsley, oil and cheese. Add salt, remaining lemon juice, and remaining pepper and toss.

Stir in cooled bulgur.
