Ingredients
- 2 tsp peanut oil
- 1/2 cup vidalia onion, chopped
- 1 1/2 tsp ginger, minced
- 1/2 cup water chesnuts
- 1cup cooked chicken
- 2 tbsp low-sodium chicken broth
- 1 tbsp low-sodium soy sauce
- 2 tbsp rice vinegar
- 1 pinch salt
- 1 pinch pepper
- 2 cups cooked brown rice
- 2 scallions, thinly sliced
- 4 bibb lettuce leaves
- 1 tsp black sesame seeds
Directions

Heat oil in a large saute pan over med-low heat

Add onion and saute for 3 min. Reduce heat to low.

Add garlic and ginger. Saute for 1 min

Add water chestnuts. Cook for 1 min

Add chicken, broth, soy sauce, vinegar, and pepper.

Add rice and cook for 3 min

Remove from heat and add scallions

Put in lettuce leaves. Sprinkle with sesame seeds
