Curried Chicken Couscous

Serves 2 people

Ingredients

  • 1 tbsp pine nuts
  • 2 tsp olive oil
  • 1/2 cup onion vidalia
  • 3/4 cup low-sodium chicken broth
  • 1/2 cup dry whole-wheat couscous
  • 1/4 tsp salt
  • 1/2 tsp curry powder
  • 1 pinch cinnamon
  • 1/4 cup tart dried cherries, chopped
  • 1 cup chicken
  • 2 scallions, thinly sliced

Directions

  1. Toast pine nuts in a 400 F oven for 2 min. Set aside to cool

  2. Heat oil in medium pan over med-low

  3. Add onions and saute for 2 min. Add broth and bring to boil. Remove from heat.

  4. Add couscous, salt, curry powder, cinnamon, and cherries. Stir well. Cover and steam for 10 min

  5. While couscous is steaming, warm chicken. Fluff cooked couscous with a fork. Add chicken, scallions, and pine nuts.
