Grilled Shrimp & Pineapple w Salsa & Sweet Potato Puree

Ingredients

  • 16 king prawns
  • 8 pineapple slices
  • 1/4 cup olive oil
  • 1 tbsp fresh chopped ginger
  • 1 tsp curry powder
  • salt
  • 1/4 cup tomatoes, diced
  • 1/4 cup melon, diced
  • 1/4 cup mango, diced
  • 2 tbsp olive oil
  • juice of 2 limes
  • 20 cilantro leaves
  • salt
  • 2 medium sweet potatoes, peeled and cut in large chunks
  • 1 tbsp butter
  • 1/4 cup cream

Directions

  1. Preheat grill

  2. Whisk 1/4 cup olive oil, ginger, curry and salt, add prawns

  3. Increase grill heat to high

  4. Remove prawns from the marinade, season with salt & pepper, and grill until golden brown each side, about 1 1/2 minutes per side

  5. Place pineapple on grill and cook app. one minute, (turn so that grill marks are visible on one side

  6. Combine tomatoes, melon, mango, 2tbsp olive oil, limes, and cilantro

  7. Boil sweet potatoes until tender. Add cream and butter, and then puree until smooth, but still thick. Season with salt and pepper
