Honey Dijon Salmon with Pecan Crust

Serves 4 people

Ingredients

  • 1 lb salmon
  • 1 tbsp olive oil
  • 3 tbsp light butter with canola oil, melted
  • 1 1/2 tbsp honey
  • 3 tbsp dijon mustard
  • 1/4 cup whole grain breadcrumbs
  • 1/4 cup finely chopped pecans
  • 1 tbsp freshly chopped parsley
  • 1/4 tsp thyme
  • 1/8 tsp salt
  • 1/8 tsp pepper

Directions

  1. Preheat oven to 400

  2. In a small bowl, combine olive oil, butter, honey and mustard

  3. In another bowl, combine breadcrumbs, pecans, parsley, thyme, salt and pepper

  4. Brush salmon with honey mustard mix

  5. Sprinkle evenly with breadcrumb mix

  6. Bake salmon 12 to 15 min checking for doneness in the middle of the filet

  7. Divide and serve with lemon wedges
