Penne & Asparagus with Ricotta Cheese

Serves 3 people

Ingredients

  • 1/2 box whole wheat penne
  • 1/2 lb trimmed asparagus, cut into 2-inch diagonal pieces
  • 1/2 cup low fat ricotta
  • 1/2 tbsp olive oil
  • 1/8 cup parmesan cheese
  • salt
  • pepper

Directions

  1. Cook pasta according to directions.

  2. 2-4 min before the pasta is done, add asparagus to wate (2 min for thin, 4 min for thick)

  3. Before draining, reserve about 1 cup of pasta water in small bowl. Drain.

  4. Add ricotta and olive oil in large serving bowl.

  5. Mix in 1/3 cup of pasta water

  6. Immediately add pasta and asparagus and gently toss with cheese mix

  7. If seems too dry, add more pasta water 1/4 cup at a time

  8. Sprinkle parmesan over pasta and sprinkle with red pepper flakes.
