Maple-Orange Scallops

Serves 1 people

Ingredients

  • 5 scallops
  • 3 tbsp range juice
  • 1 tbsp maple syrup
  • 1 tsp low-sodium soy sauce
  • 1/4 tsp soy sauce
  • 1 crushed garlic clove
  • 1 cup bulgur
  • 1/2 cup chopped tomato
  • 1/4 cup chopped cucumber
  • 1 tbsp olive oil
  • 1 tsp olive oil

Directions

  1. Marinate scallops in oj, syrup, soy sauce, and garlic for 30 min.

  2. Drain scallops; saute in 1 tbsp olive oil until golden outside and firm inside about 5 min per side

  3. Serve with 1 cup cooked bulgar tossed with tomato, cucumber, 2 tbsp orange juice, 1 tsp olive oil, 1/4 tsp soy sauce
