Corn Grits with Greens

Breakfast anybody! The carrot juice along with the greens make for an absolutely nutritious dish! Tasty too.

Ingredients
- 3 T. roasted pumpkin Seeds
- 1/2 t. soy sauce
- 2 cups carrot juice
- 1 cup instant grits
- 1/2 cup green onions
- 1 T. olive oil
- 3 garlic cloves
- 2 bunches spinach
- 1 bunch arugula
- 1 t. vinegar
- salt and pepper to taste
Directions

Toast seeds until they begin to pop, about 3 minutes. Transfer to bowl and toss with soy sauce and salt.

Bring carrot juice to a boil and stir in grits and 1/4 t. salt. Lower heat and cook, stirring occasionally until grits thicken, 6 min or so.

Meanwhile, heat oil and add minced garlic and cook just until it begins to change color, about 2 min. Add greens and cook just until they begin to wilt. Stir in vinegar and serve on top of grits sprinkled with roasted pumpkin seeds.
