Ingredients
- 1 tablespoon EVOO
- 1 medium sweet potato, peeled and diced into 1/4 inch cubes
- 1/4 tsp chipotle chile powder ( or more to taste)
- kosher salt and freshly ground black pepper
Directions

Heat olive oil in a medium skillet set over medium-high

Add in the sweet potato cubes, a generous pinch of kosher salt, and the chile powder.

Stir to coat the sweet potato, then let sit for 2-3 minutes, or until crisp and browned on the bottom.

Stir the potatoes and brown the other side for another 2-3 minutes.

Repeat steps until all sides of the sweet potato cubes are crisip and browned.

Drain on paper towel and season to taste with salt and pepper.
