Kale Slaw with Red Cabbage and Carrot

Ingredients
- 1 Tbs olive oil
- 1 Tbs Dijon mustard
- 1 tsp apple cider vinegar
- kale, shredded
- red cabbage, shredded
- 1 carrot, julienned
- 1/4 cup fresh parsley leaves
- 2 Tbs red onion, diced
- 2 Tbs sunflower seeds
- 2 Tbs pumpkin seeds
- salt & pepper
Directions

In a small bowl, whisk 1 Tbs olive oil, 1 Tbs Dijon mustard, and 1 tsp apple cider vinegar. Season with coarse salt and pepper.

In another bowl, combine 3 cups mixed shredded kale and red cabbage, 1 peeled and julienned carrot, 1/4 cup fresh parsley leaves, 2 Tbs diced red onion, and 2 Tbs each sunflower, pumpkin seeds.

Season with coarse salt and pepper, drizzle with dressing, and toss to coat.
