Ingredients
- 1 bunch green asparagus, trimmed
- 1 bunch white asparagus, peeled & trimmed
- 2 small heads frisee lettuce, cleaned
- parmesan cheese shavings to serve
- 6 Tbs champagne vinegar
- 2 Tbs wholegrain mustard
- 2 Tbs honey
- 1/2 cup olive oil
- salt and pepper

In a pot of boiling salted water, blanch asparagus for 3-5 minutes until just tender. Transfer to a cold water bath.

Vinaigrette: Mix mustard, vinegar and honey. Slowly add the olive oil and mix until blended. Season with salt and pepper.
