Cranberry Quinoa Salad

Ingredients
- * 1 cup quinoa
- * 2 cups water
- * 11/2 cups whole cranberries
- * 4 TB fresh lime juice
- * 4 TB honey
- * 1 TB lemongrass, minced
- * 1 tsp garlic, minced
- * 11/2 tsp serrano peppers, seeded, minced
- * 1 TB mint, minced
- * 1 TB cilantro, minced
- * 1/4 cup red onion, minced
Directions

Rinse quinoa several times. Bring water and quinoa to boil, simmer 20 minutes or until all liquid is absorbed. Combine 2 TB honey, lemongrass, garlic and peppers, and add to quinoa. Chop cranberries with 2 TB honey and lime juice in food processor or blender; combine with quinoa. Add mint, cilantro and red onion, mix thoroughly and serve chilled.
