Romaine, Beans and Corn Salad

Combine the flavorful romaine with filling corn and beans topped with a great dressing and all you need is homemade bread or crackers

Serves 6 people
Ingredients
- 1 cup corn
- 1 cup drained black beans or garbanzo beans
- 1/2 cup chopped red onions
- 1 chopped tomato
- 1/2 finely diced cup red pepper
- 1 sliced cucumber
- 1 romaine lettuce, chopped
- Marinade or dressing
- 2 T. chopped cilantro
- 4 T. lemon or lime juice
- 1/2 cup olive oil
- 3/4 t. ground cumin
- 1 T. minced garlic
- 1/4 t. black pepper
- salt to taste
Directions

Place all dressing ingredients in a blender and blend well. Combine the dressing with the beans (or garbanzos), corn, cucumber, red pepper, red onion, and tomatoes; Toss well and marinate for 2-4 hours.

When ready to serve, add the marinated veggies to chopped lettuce and toss well to coat.
