Double Lentil and Sweet Potato Soup

Ingredients

  • 3 cups water
  • 4 roma tomatoes, diced
  • 1 small sweet yellow or red onion, diced
  • 3 cloves garlic
  • 1/2 tsp grated ginger
  • 1 serrano chile (optional)
  • 1 cup lentils- 1/2 cup red lentils & 1/2 cup brown lentils; sorted and rinsed
  • 1 large, or 2 small, sweet potatoes, peeled, cut into 1/2 inch cubes
  • 6 cups kale, roughly chopped
  • 1/2 tsp cumin
  • 1/2 tsp mustard
  • 1/2 tsp paprika
  • 1/2 tsp turmeric

Directions

  1. In a large pot, over medium heat, combine water, tomatoes, onion, garlic, ginger and chile.

  2. Bring to a boil and add lentils.

  3. Lower heat and cover the pot. Simmer for 15 minutes.

  4. Add the sweet potatoes, and cook for 15 more minutes, or until fork tender.

  5. Add spices.

  6. Add kale and cook to wilt the kale.

  7. Soup is ready to be served once kale is wilted and spices are mixed in thoroughly.
