Squash, Okra & Tomatoes

Day 11 + this can be served over brown rice.

Serves 4 people

Ingredients

  • 1 large summer squash (aprox. 2 cups chopped)
  • 3/4 cup fresh or frozen okra
  • 2 C tomato, chopped
  • 1 medium onion, chopped
  • 1 tbs Olive oil
  • Get creative adding seasonings of your choice, Mrs. Dash blends, etc.

Directions

  1. Saute onion using olive oil.

  2. Add squash and okra, saute for 4 minutes.

  3. Add tomatoes.

  4. Add seasonings, sea salt, and pepper to taste.

  5. Cook on medium heat for 1/2 hour.
