Palak Paneer Recipe

Ingredients
- Spinach/Palak - 3 cups tightly packed
- Paneeer/Indian cheese - 15-20 pieces. (Refer Homemade Paneer recipe for soft and delicious paneer)
- Garlic -4 cloves finely chopped
- Onion - 1/2 cup chopped finely
- Ginger- garlic paste - 1/2 tsp
- Turmeric powder -1/4 tsp
- Tomatoes -2 finely chopped
- Green Chillies -1
- Oil- 2 tbsp
- Salt as required
- Spice powder
- Cumin /Jeera powder -1/2 tsp
- Coriander powder -1 tsp
- Chillies powder -1/2 tsp or as required
- Garam masala powder -1/4 tsp
- For the seasoning
- Cumin seeds -1 tsp

Method

Cook spinach in boiling water for 5 minutes.When it cools, grind it to a fine paste with chillies. Keep it aside.

Cut paneer into cubes and shallow fry it in oil till light brown. Keep it aside

Heat oil in a pan and add cumin seeds, when it splutters, add finely chopped onions, garlic and saute till it becomes transparent.

Add ginger-garlic paste and saute for a few more minutes.

Add tomatoes and cook till tomatoes turn mushy. Add salt needed and all the spice powder .

Now add the palak/spinach puree and a cup of water.Use the water in which you cooked spinach. Let the gravy start boiling.

Add paneer cubes and simmer for 3 minutes until everything gets blended well.

If the gravy become thick, add more water and adjust the consistency. Check for salt.
