Ingredients
- 3 cups dried channa dal or yellow lentils
- 1 (1" piece) ginger, peeled and grated
- 2 cloves of garlic, peeled and grated
- 1 tsp tomato paste
- 1 tsp cumin seeds
- 1 tsp ground coriander
- 1 tsp garam masala
- 1 tsp turmeric powder
- 1 1/2 Tbs salt
- 8 cups water
- 4 cups spinach, coarsely chopped
Directions

1) Put the lentils, ginger, garlic, tomato paste, cumin, coriander, garam masala, turmeric, salt, and water in the slow cooker.

2) Cook on low for 6 hours, then add the spinach. Turn off the slow cooker and let sit for 15 minutes with the lid on. Serve as a soup or over brown or basmati rice.
