Onion Thokku

Ingredients
- Onion - 250 grams or 1/4 kg
- Chillie powder - 20 -25 grams
- Salt - 40 grams
- Tamarind - 40 grams
- Oil - 1/4 cup
- Fenugreek powder - 1/2 tsp
- For the seasoning
- Mustard - 1/4 tsp
- Asafoetida/Hing -1/4 tsp
Directions

Peel and grind onions to a paste.

Soak tamarind in warm water ( around 1 1/2 cups) and extract it juice .Discard the pulp.

Dry roast fenugreek seeds and powder it.

Method

Heat oil in a heavy bottomed pan, add mustard seeds, when it splutters, add asafoetida.

Then add grounded onion paste and turmeric powder. Fry for a few minutes.

Add tamarind extract, salt, chillie powder and cook till it becomes thick and oil starts separating.

Add fenugreek powder and remove from flame.

Store it in a clean bottle.
