Pumpkin Sweet Idli

Ingredients

  • grated pumpkin (red) - 2 cups
  • idli rava - 1 cup
  • jaggery or brown sugar - 3/4 cup
  • grated coconut - 2 tbsp
  • salt - 1 pinch
  • cardamom powder - 1/2 tsp
  • nutmeg powder - 1/4 tsp

Directions

  1. Mix all the above ingredients and keep for about 1 hour until the idli rava is soaked

  2. thoroughly.

  3. Add a little water if the pumpkin is dry.

  4. Bake in pressure cooker without the whistle for around 15-20 minutes.

  5. Serve hot with fresh Ghee.
