Ganji Saaru(Rasam)

Ingredients

  • 2 cups Ganji
  • 1/2 Onion, chopped finely
  • 4 pods of garlic, chopped finely
  • 1/2 inch Ginger, chopped finely
  • 2 green Chillies, slit (Optional)
  • Few Curry leaves
  • 1 tsp Jeera/Cumin Seeds
  • 2 tsp Ghee
  • 1 tbls Rasam Powder
  • 2 tbls Fresh Coriander leaves, chopped
  • 1/2 tsp Hing
  • Salt to taste

Directions

  1. In a kadai fry cumin seeds and curry leaves in ghee till they splutter.

  2. To this add chopped garlic and onion and fry till they turn golden yellow.

  3. Add hing, green chillies and ginger.

  4. To this add ganji, salt and rasam powder.

  5. Keep it in medium flame and bring it to boil.

  6. Garnish with coriander leaves and serve hot with rice.

  7. Tips:

  8. If you are short of rasam powder you can use black pepper powder or dry red chilli powder with little bit of coriander powder.

  9. Ganji usually turn little thick when it cools. So you can add a cup of water and bring it to boil.
