Turkey Loaf and Baked Sweet Potatoes

Ingredients
- 1 slice white bread, crust removed, torn into small pieces (about 1 cup)
- 1/4 cup Rich Chicken Stock or canned low-sodium chicken broth
- 1 1/2 pounds lean ground turkey
- 1 large egg
- 1/4 cup finely chopped yellow onion
- 1/4 cup chopped red or green bell pepper, or a combination of the two
- 1/4 cup chopped fresh parsley
- 1 tsp commercially prepared horseradish
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
- 4 to 6 medium sweet potatoes
- Light sour cream or nonfat yogurt, for topping
- 2 Tbs snipped fresh chives

Preheat oven to 350°F. In a large bowl, add all ingredients except sweet potatoes and chives and mix thoroughly. Place in a 4 1/2-by- 8 1/2-inch loaf pan lightly coated with cooking spray or oil. Bake, uncovered, for about 1 hour.

While the turkey loaf is baking, place potatoes in a 7 1/2-by- 11 3/4-inch baking dish lightly coated with cooking spray or oil and bake for about 1 hour, piercing skins with a fork halfway through the cooking time.

When the turkey loaf if done, remove from oven and let it stand 10 minutes. Run a knife around the sides of the pan and invert loaf onto a platter. Cut potatoes in half and arrange around turkey loaf. Add a dollop of sour cream or yogurt and sprinkle with chives.
