Parval Subzi (Potol/pointed gourd/Trichosanthes dioica)

Ingredients
- 4 cups of washed cut parval or potol
- 1 tbsp oil
- 1/4 tsp mustard seeds
- 1/4 tsp jeera
- 3 pods of crushed garlic
- 1 1/2 tbsp chili flakes (add more if you want it spicy)
- salt to taste
Directions

Microwave the washed cut parval with 1/4 tsp salt for 4+5 minutes. Keep aside

In a pan add the oil and once its hot add the mustard seeds and jeera. Once they pop add the crushed garlic. Give this a nice mix and then add the microwaved parval.Sprinkle the chili flakes and mix. Adjust the salt and let this cook covered for another 5 minutes on medium heat.

Serve hot with rotis or rice
