Snake Gourd curry

Ingredients
- 2 snake gourds (washed,cut into bite size pieces and microwaved with 1/4 tsp salt for 4+4 minutes)
- 4 tbsp channa dal soaked for 4 hours
- 1 tbsp oil
- 1/2 tsp mustard seeds
- pinch of hing
- 4 curry leaves
- 1/4 tsp turmeric powder
- 1/2 onion finely chopped
- 2 chillies finely chopped
- 2 tbsp grated coconut
- salt to taste
- cilantro and dash of lime for garnish

In a pan add oil.Once its hot add the mustard seeds and let it pop.Follow it by adding hing,curry leaves,turmeric powder,chillies and finely chopped onion with a pinch of salt. Saute this for 30 secs. Then add the soaked ,drained channa dal and cook covered for 2-3 minutes on a med-low flame.

Do a taste test and see if the channa dal is cooked. Once its cooked add the microwaved snake guard. Toss and mix well. Let this cook for about 5 minutes. Then add the grated coconut and adjust the salt. Garnish with cilantro and a dash of lime.
