Lauki curry

Ingredients

  • 1 laudki (bottle guard) peeled,seeds removed,cut into bite size pieces and microwaved for 4+4 minutes with 1/4 tsp salt
  • 1 tbsp oil
  • 1/4 tsp jeera
  • 1/4 tsp turmeric powder
  • pinch of hing
  • 2 tomatoes
  • 3/4 tsp chilli powder
  • 1/4 tsp garam masala
  • 1 tsp dhania powder
  • 1/4 tsp amchoor powder
  • 1/4 cup water
  • cilantro to garnish
  • salt to taste

Directions

  1. In a pan add the oil. Once hot add the jeera and let it sizzle. Follow this by adding the tomato and let this cook till the oil oozes from the sides.

  2. Add the turmeric powder,hing,chilli powder,dhania powder,garam masala and amchoor powder. Give this a good mix

  3. Add the microwaved lauki to this and the water. Give this a good mix. Adjust the salt and let this cook for another 4 minutes on a medium flame.

  4. Garnish with cilantro and serve hot with rice or rotis.
