Amrakhand (Mango Shrikhand)

Ingredients
- 32 oz (500 ml) youghurt
- cheesecloth or sieve lined with paper towels
- 1/4 tsp freshly ground cardamom
- pinch of saffron
- 1/2 cup of sliced almonds or a combination of almonds and pistachios
- 4 tbsp mango pulp
- 12 tsp sugar (this can be adjusted if you want it sweeter)

Hang the yoghurt in a cheese cloth or alternatively line a sieve with paper towel and let the excess water drain overnight.This will result in thick yoghurt the next day. Put this is a bowl

To the yoghurt add saffron,sugar,cardamom ,mango pulp and mix well with a spoon till everything is well incorporated. Adjust the sugar if you want it sweeter.

Garnish with almonds and refrigerate. Serve chilled and enjoy the mango shrikhand.
