blintz cupcakes

Cook time: 40 minutes

Ingredients

  • 1 lb. creamed cottage cheese
  • 2 oz. melted butter
  • 3/4 cup sugar
  • Scant 1/2 cup cake meal
  • 4 beaten eggs (can use egg substitute)

Directions

  1. Mix all ingredients together except eggs; then add eggs.

  2. Grease muffin tins.

  3. Fill tins 3/4 full;

  4. bake 350°F for 40 to 45 minutes if using large muffin tins.

  5. Smaller muffin tins will require less time. Serve with sour cream or jelly.

  6. Poster’s Notes:

  7. I have made these cupcake/muffins and they are wonderful with fresh fruit. The sugar can be cut (for less sweet) and since there is less than 1/2 cup cake meal for 12 to 16 cupcakes, the carbs aren’t horrific. My mom found the recipe on the web.
