Quick Pickles

Ingredients

  • 1 lb sliced kirby cucumbers
  • coarse salt
  • 1 cup white vinegar
  • 1 cup water
  • 1 Tbs pickling spice
  • 2 tsp salt
  • 1 clove garlic
  • a few sprigs dill
  • 1 Tbs sugar

Directions

  1. Toss cucumber slices with 2 Tbs coarse salt. Chill for 1 hour. Rinse and drain. Combine vinegar and water, and dill and spices.Stir to dissolve. Add cukes and chill in a quart container overnight or up to 1 month.
