Pumpkin, Pine nut and Feta Salad

Ingredients
- 80g toasted pine nuts
- 1kg pumpkin - cubed and roasted
- 1 red onion
- 1/2 cup chopped parsley
- 60mL olive oil
- 2Tbsp red wine vinegar
- 120g cubed feta
