Chicken Caesar Salad

Serves 2 people

Ingredients

  • 200g chicken, sliced into thin strips
  • 3 bacon rashers
  • 20g butter
  • 1Tbsp oil
  • 1 garlic clove
  • 3 slices of white bread
  • 1 cos lettuce, torn into small pieces
  • 40g grated parmasen
  • Dressing:
  • 1 egg
  • 80mL olive oil
  • 1 tsp Dijon mustard
  • 2 anchovy fillets

Directions

  1. remove the crust from the bread and cut into 1cm cubes and then fry in butter and garlic. Remove and place on a serviette to soak up any extra moisture

  2. lightly fry the chicken

  3. fry or grill the bacon until crisp. Remove and place on a serviette

  4. mix all the ingredients.

  5. For the dressing:

  6. boil the egg for a minute, then remove the shell and blend with the remaining ingredients
