Prawn, Nectarine and Hazelnut Salad

Great during summer with seafood dishes

Prep time: 10 minutes
Cook time: 15 minutes
Serves 2 people

Ingredients

  • 500g cooked peeled prawns
  • 4 nectarines, cut into slices
  • 2 cups of rocket (arugula)
  • 1/2 cup of chopped parsley
  • oil and lime juice for dressing
  • Crushed hazelnuts

Directions

  1. lightly coat the nectarines in oil before grilling on a BBQ.

  2. mix all the ingredients

  3. drizzle with the oil and lime juice dressing
