Castellane with Lentils and Porcini Mushrooms (Castellane con Lenticchie di Castelluccio e Funghi Porcini)

Ingredients

  • 1 cup dried porcini mushroooms
  • 2 Tbs extra virgin olive oil
  • 2 clovesgarlic, chopped
  • 1 can (15 ounces)lentils
  • 1 box (16 ounces)BARILLA Castellane
  • to tastesalt
  • to taste freshly ground black pepper
  • 1 Tbs fresh Italian parsley, chopped 1 Tbs

Directions

  1. SOAK Porcini mushrooms for 30 minutes.

  2. HEAT oil in a skillet; add garlic and sauté until garlic turns light yellow.

  3. ADD lentils. Cover with warm water, season with salt and black pepper.

  4. ADD porcini mushrooms, roughly chopped.

  5. COOK pasta according to the directions. Drain and add to the sauce.

  6. TOSS well; garnish with chopped Italian parsley.
