Buckwheat Teff Crepes

Ingredients

  • 1 cup milk
  • 1/3 cup water
  • 3 large eggs (or 2 eggs & 2tsp flax seed meal)
  • 1/4 tsp salt
  • 1/2 cup buckwheat flour
  • 1/3 cup teff flour
  • 1/2 all-purpose flour (or 1/4 cup all-purp & 1/4 cup barley flour)
  • 2 TBL coconut oil
  • honey to taste

Directions

  1. Blend the milk, water, eggs, and salt in a blender. Add the flours and blend for 1 minute. Add the coconut oil and add to mix.

  2. Cook in crepe pan brushed with oil.
